RAINBOW RECIPES FOR BREAKFAST, LUNCH, & DINNER
Recipes with fruits and vegetables of many colors

Eat a Healthy Rainbow Every Day!
Rainbow Omelet |

Breakfast |
Ingredients:
2 eggs, mixed with a tablespoon of water
3 teaspoons olive oil
Cut up pieces of:
Red tomato
Orange carrot
Yellow string beans
Green spinach
Purple onion
pinch of tarragon, sage, salt, and pepper
Saute veggies in one teas. of oil. In an omelet pan, on the grill, or in a frying pan, heat the other 2 teaspoons of oil. Add the egg mixture. Cook till almost done. Add the sauteed veggie mixture to the top. Cook till done. Use a spatula to fold the omelet in half.
Serve with whole wheat toast.

Rainbow Mountain of Fruit |

Lunch |
Ingredients:
Yogurt
Red watermelon and cherries
Orange cantaloupe and mandarin oranges
Yellow apples and bananas
Green honeydew melon
Blue blueberries
Purple plums and nectarines
Honey roasted almonds
Cut all pieces of fruit into small pieces. Mound on your plate to make a tall mountain. Top with yogurt. Sprinkle the top with honey roasted almonds.
Serve with a small whole grain muffin.

Rainbow Stew |

Dinner |
Ingredients:
Red stewed tomatoes, red potatoes
Orange carrots
Yellow summer squash
Green celery, green peas
Purple onion slices
1/2 pound of beef
A little flour
Cut the fresh veggies, potatoes, and beef into small pieces. Dip in flour. Brown in pan pan coated with a non-fat spray. In a sauce pan heat the stewed tomotoes. Add the browned veggies, potatoes, and beef. Cook until tender. Add water if necessary.
Serve with whole grained bread.
